I am obsessed with my new overnight oats recipe. It’s ridiculously easy and super healthy – on top of that it genuinely does keep you full until lunch time, so great if you’re trying to cut down on snacking pre-lunch.
The benefits of eating a proper breakfast have been widely researched and studies show eating a good one can improve concentration throughout the day and make you less likely to reach for high sugar and fatty snacks mid-morning.
Why is this overnight oats recipe good for you?
As I talked about in my porridge and yoghurt bread recipe, oats are a gluten-free whole grain and a great source of important vitamins, minerals, fibre and antioxidants. I’ve packed this recipe full of other good stuff too, like flaxseed, chia seed and optional protein powder for that all important protein portion at breakfast time.
ADAPTING THE OVERNIGHT OATS RECIPE
• Dried fruit and nuts – you can use your favourite – I used apricots and pine nuts for example, but you could use sultanas, chopped dates, pistachios, cashews or anything really you have left to use up
• Protein Powder – this isn’t imperative to the recipe; however I did add 2 table spoons, just because I like increase it’s nutritional content. The Jarrows Brown Rice protein was recommended to me by friends at Diligent Fitness and I love it! It’s perfect for adding to smoothies too.
• Sweetness – I used maple syrup, but honey also works with this recipe!
• Texture – these measures result in a thick texture – if you prefer a more runny in consistency, just add more coconut milk or water. water
Overnight oats ingredients
1 can of full fat coconut milk (400ml)
150g wholegrain oats
2 tablespoons of: chopped apricots, chopped pecans, pine nuts, sesame seeds, flaxseed, chia seeds, pumpkin seeds
1 tablespoon of: desiccated coconut, maple syrup
Optional extra: 2 tablespoons of Jarrows Brown Rice Protein Powder
Overnight oats method
Simply add all the ingredients to a bowl and stir until evenly combined. Leave covered, overnight in the fridge.
