Three 30 Minute Healthy Meals

Raw Paleo Pad Thai

4 courgettes/ zucchinis- 2 yellow, 2 green, julienned.
4 salad onions, finely sliced.
4 carrots, julienned.
1/2 white cabbage, finely sliced.
10 brussel sprouts, grated.
10 radishes, grated.

For the Mango Sauce
1 mango, diced
1 /2 white onion, sliced
1/2, chili
1 lime, juiced.

For the Pad Thai, simply add the raw ingredients to a bowl, and dress with plenty of lime juice and a splash of olive oil.
For a richer dressing, add coconut milk and a spoonful of almond butter mixed together.
For the Mango Sauce, simply add all ingredients to a blender, and puree! Easy.

Paleo Caulizotto with Scallops


1 large cauliflower, chopped
1 large knob of butter/ glug of olive oil
250 ml chicken stock
4 slices of pancetta
1 cup of frozen peas
4- 6 large scallops
1 cup of parmesan (optional)


In a pan, melt the butter. Add the chopped cauliflower and stir.
Once it’s beginning to brown, add the chicken stock and simmer.
Meanwhile, fry the pancetta and set to one side.
Once the stock has reduced, add the peas and cheese, and stir.
Season with black pepper.
In a separate pan, melt some butter, and fry the scallops on a medium heat for 30 seconds to 1 minute each side.
Add 50% of the pancetta to the caulizotto. Stir.
Assemble, caulizotto first, then add the scallops. Garnish with the remaining pancetta.

Paleo Breakfast Bake, with Kale, Bacon and Chorizo

1 White Onion, chopped
1 Inch of Chorizo, chopped (I got a fab spicy Chorizo sausage from Wholefoods- Make sure you check the label for additives/ nasties.)
3 Slices of streaky Bacon, chopped
Handful of Kale, chopped
4 Green Onions, diced
1 Sweet Potato, finely sliced using a grater
2 Carrots, grated
Teaspoon of coconut oil
6 Eggs

Finely grease your baking dish. Set the oven to 400 degree/ 225 degrees.
Add the onions, bacon and chorizo to a hot pan. Cook in the coconut oil.
meanwhile, add the veg to a large mixing bowl.
Season with black pepper.
Once the onions are browned and the bacon is cooked. Add to the mixing bowl.
Crack in the eggs and stir. Add to your baking dish.
Bake for 30 mins.
